The pumpkin season continues! October was the month for carving them, and November is the month to eat this fabulous gourd. Over the course of this month, we happily share our favorite pumpkin – BEER recipes that come straight out of the Handbrewed Kitchen!
The Pumpkin Chocolate Beer Cookie is a favorite around our house! Both the adult and kid give it a-thumbs up!
¼ c. Butter
1 ¼ c. Sugar
1/3 c. of Beer (Brown Ale or Pumpkin Ale is preferred)
1 c. Pumpkin
1 tsp. Vanilla
2-½ c. Flour
1 tsp. Baking Soda
1 tsp. Baking Powder
1 tsp. Cinnamon
1 tsp. Nutmeg
½ tsp. salt
Bag of Semi- Sweet Chocolate Chips
Preheat oven to 350 degrees Fahrenheit. Slightly butter cookie sheets. Cream butter and sugar until fluffy. Blend in pumpkin, egg, beer, and vanilla. Sift flour, baking soda, baking powder, cinnamon, nutmeg and salt into a bowl. Add to butter mixture, Blend well. Stir in chocolate chips. Drop batter by heaping tsp. onto sheets. Bake until lightly brown, about 15 minutes. Cool on wire rack.
